Creamy, Southern Stone-Ground Grits - Divas Can Cook.
I have lived in Canada for 56 years and have always had to buy 5-6 boxes of Quaker grits whenever I returned to the US on a trip. My Canadian husband also likes them. I was totally pleasantly surprised when I found grits on Amazon Canada and bought 2 packages. I just prepared my first serving of Bob’s most reasonably priced grits. I ate servings for 3 with lots of butter. Oh! lord have mercy.
If you don’t live in the south, stone ground grits are harder to come by. I buy my preferred brand, Palmetto Farms, off Amazon. Other quality brands are Geechie Boy or Charleston. Trader Joe’s and Bob’s Red Mill also make stone ground varieties. Stone ground grits are very creamy with a little chewiness from the whole corn kernel being.
There are three categories of stones - ara-to, naka-to and shiage-to (rough, medium and fine). This is a question of patience and perfectionism vs minimalism. You would probably be better served with a single naka-to stone in about an 800-1000 gri.
